Ingredients (view qty in metric system instead)
2 cups all purpose flour 1/2 tsp. baking powder 1/4 tsp. salt 1/2 cup unsalted butter, softened 1/2 cup plus 1 tbsp. sugar 2 large eggs 1/2 cup sweet cider
Directions
Preheat oven to 325 degrees. Butter an 8 inch round cake pan. Line the bottom of the pan with a circle of buttered wax paper. Sift together flour and baking powder into a medium bowl. Stir in salt. Cream butter in a large bowl until smooth. Beat in 1/2 cup sugar until light and fluffy. Add eggs one at a time, beating after each addition. Fold in dry ingredients alternately with cider. Pour batter into prepared pan. Sprinkle remaining 1 tbsp. sugar over top of batter. Bake about 35 minutes until cake is lightly browned around edges and starts to pull away from sides of pan. Cool cake in pan 10 minutes. Remove cake from pan and peel off wax paper. Serve cake warm with butter and jam.
Makes one 8 inch round cake.
