Ingredients (view qty in metric system instead)
2 3/4 cups all purpose flour 6 tbsp. sugar plus additional for sprinkling 1 1/2 tbsp. baking powder 1 tsp. salt 1/2 cup cold diced butter 3/4 cup raisins 1 cup heavy or whipping cream 2 large eggs
Directions
Preheat oven to 400 degrees. Lightly dust a sheet pan with flour. Sift together flour and baking powder in a large bowl. Stir in sugar and salt. Add butter and rub in with your fingers until a coarse meal forms. Mix in raisins. Whisk together eggs and cream in a small bowl. Stir into dough just until combined. Pat dough into a 1 inch thick round on a lightly floured surface. Cut out 3 inch rounds with a cookie cutter. Gather scraps and press together. Cut out additional rounds. Transfer rounds to prepared pan and sprinkle additional sugar over tops. Bake 10 minutes. Reduce oven to 350 degrees and bake an additional 15 to 18 minutes until lightly browned. Cool slightly. Serve warm.
Makes about 8 scones.
