Ingredients (view qty in metric system instead)
1/2 cup brown sugar 1/2 cup plus 2 tbsp. vegetable oil 1/3 cup honey 1 cup whole wheat flour 1/2 cup unbleached all purpose flour 1/2 cup soya flour 1 cup raisins 1/2 cup chopped walnuts or pecans 2 tsp. baking powder 1 tsp. ground cinnamon 1/2 tsp. salt 1/4 tsp. ground nutmeg
Directions
Preheat oven to 375 degrees. Lightly grease a cookie sheet. Combine sugar, oil and honey in a large bowl. In a separate bowl combine flours, raisins, nuts, baking powder, cinnamon, salt and nutmeg. Stir into sugar mixture until well blended. Drop tablespoonfuls of dough onto prepared pan, spacing 1 inch apart. Flatten cookies slightly. Bake 8 to 10 minutes until cookies are browned. Cool 3 minutes on pan. Transfer cookies to racks and cool completely.
Makes about 5 dozen cookies.
