Ingredients (view qty in metric system instead)
1 3/4 cup all purpose flour 3/4 cup brown sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 1 tsp. ground cinnamon 1/4 tsp. ground ginger 1/8 tsp. ground nutmeg 1/8 tsp. ground cloves 1 cup peeled, coarsely grated apple 1/2 cup chopped walnuts 1/3 cup raisins 1 cup nonfat yogurt, room temperature 1/3 cup vegetable oil 1 large egg 2 tsp. vanilla extract powdered sugar
Directions
Preheat oven to 350 degrees. Lightly coat the inside of an 8x8 inch baking pan with cooking spray. Stir together the flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, nutmeg, cloves, apples, walnuts and raisins in a large bowl. Stir together the yogurt, oil, egg and vanilla in a small bowl. Stir the yogurt mixture into the dry ingredients until evenly moistened and thoroughly combined. Scrape the batter into the prepared pan and smooth top. Bake 35 to 40 minutes until a toothpick comes out clean. Transfer cake to a rack and cool completely. Cut cake into squares and sift powdered sugar over top before serving. Store cake refrigerated in an airtight container.
Makes about 9 to 12 pieces.
