Ingredients (view qty in metric system instead)
1 tbsp. olive oil 1 medium zucchini, stemmed and diced 1 medium yellow squash, diced 1/2 tsp. crushed red pepper flakes 16 ounce baked cheese pizza crust 14 ounce jar mushroom pizza sauce 3 large cloves garlic, peeled and minced 4 ounces shredded mozzarella cheese 1/2 cup oil-packed sun-dried tomatoes, drained and sliced 1/3 cup grated parmesan cheese
Directions
Preheat oven to 450 degrees. Heat oil in a medium skillet. Add zucchini, squash and pepper flakes and cook until crisp-tender, about 5 minutes. Place pizza crust on a sheet pan. Spread sauce over top, leaving a 1 inch margin. Sprinkle garlic and mozzarella over sauce. Top with zucchini mixture and sun-dried tomatoes. Sprinkle parmesan over vegetables. Bake pizza 13 to 15 minutes until cheese is melted and crust is crisp. Remove pizza from oven and let stand 2 to 3 minutes before slicing.
Makes 8 to 12 pieces.
