Easy Three Step Glazed Roasted Pork Tenderloin

Ingredients (view qty in metric system instead)
1/4 cup red currant jelly 1 tsp. cider vinegar 3 to 4 pound boneless pork loin
Directions
Preheat oven to 350 degrees. Combine currant jelly and vinegar in a small saucepan over medium heat. Cook, stirring frequently, until jelly is melted. Place pork in a medium roasting pan. Brush all over with the currant jelly mixture. Cover pan with foil and roast pork 1 hour.
Remove pork from the oven. Reduce oven to 325 degrees. Uncover pork and brush with pan juices. Roast pork, uncovered, an additional 15 minutes. Remove pork from the oven and let stand 15 minutes before slicing and serving.
Serves 6 to 8.
