Ingredients (view qty in metric system instead)
Pizza Dough: 2 cups all purpose flour 2 1/2 tsp. active dry yeast 1 tsp. sugar 1 cup hot water(120 to 130 degrees) 1 cup yellow cornmeal 2 tbsp. olive oil 1 tsp. salt
Pizza Topping: olive oil 1/3 cup crumbled blue cheese 2/3 cup shredded Mozzarella cheese 2/3 cup thinly sliced red onion 1/2 tsp. crumbled dried rosemary 1/3 cup grated Parmesan cheese
Directions
For Dough: Preheat oven to 500 degrees. Grease a large sheet pan and sprinkle with some cornmeal. Combine 1 cup flour, yeast and sugar in a food processor. Pulse to blend. Add remaining 1 cup flour, water, cornmeal, olive oil and salt and blend until a ball forms. Process an additional 15 seconds. Turn dough out onto a floured surface and knead 10 times. Divide dough into 3 pieces. Roll out each dough pieces to an 8 inch round. Transfer pizza crusts to the prepared pan.
For Topping: Brush tops of pizza crusts with olive oil. Top pizzas evenly with blue cheese, Mozzarella, onion, rosemary and Parmesan. Bake pizzas 10 to 12 minutes until crust is golden and cheeses are bubbly and golden. Remove pizzas from oven and let stand a few minutes before slicing.
Makes three 8 inch pizzas.
