Ingredients (view qty in metric system instead)
Dressing: 6 tbsp. creamy peanut butter 1/4 cup chicken broth 3 tbsp. rice wine vinegar 3 tbsp. soy sauce 1 1/2 tbsp. sugar 1 tbsp. sesame oil 1 tbsp. peeled, minced fresh ginger 1/2 tsp. cayenne pepper
Salad: 8 ounces uncooked soba noodles or linguine 1 large red or orange bell pepper, stemmed, seeded and cut into matchsticks 1/2 cup chopped green onions lettuce leaves 1/4 cup chopped fresh cilantro leaves 1/4 cup chopped salted peanuts
Directions
For Dressing: Combine peanut butter, broth, rice wine vinegar, soy sauce, sugar, sesame oil, ginger and cayenne in a blender. Blend on low speed until well combined.
For Salad: Heat a large pot of lightly salted water to a boil. Add soba noodles or linguine and boil until just tender, stirring frequently. Drain pasta and cool under cold water. Drain pasta well and transfer to a medium bowl. Add bell pepper, green onions and prepared dressing. Toss well to coat. Line the inside of a large serving bowl with lettuce leaves. Spoon the pasta salad into the prepared bowl. Sprinkle the cilantro and peanuts over the top of the salad and serve.
Serves 4 to 6.
