Ingredients (view qty in metric system instead)
Dressing: 1/2 tsp. finely grated lime peel 3 tbsp. fresh lime juice 1/4 cup sesame oil 1 tbsp. peeled, minced fresh ginger 1 tsp. curry powder 1/8 tsp. salt 1/8 tsp. pepper
Salad: 4 cups mixed lettuce 1 small red bell pepper, cored, seeded and thinly sliced 2 cups chopped cooked chicken 1/3 cup chopped honey roasted peanuts
Directions
For Dressing: Whisk together lime peel, lime juice, sesame oil, ginger, curry, salt and pepper in a small bowl.
Salad: Divide lettuce between 2 plates. Sprinkle bell pepper slices over. Transfer dressing to a medium skillet. Heat through over medium heat. Add chicken and cook until heated through, tossing frequently. Spoon chicken and dressing over lettuce. Sprinkle with chopped peanuts and serve.
Serves 2.
