Ingredients (view qty in metric system instead)
4 large, hot baked potatoes 1 cup prepared salsa, drained 15 ounce can black beans, rinsed and drained 11 ounce can corn with peppers, drained 1 cup shredded Cheddar cheese 1/2 cup sour cream 1 tsp. chili powder
Directions
Preheat oven to 350 degrees. Place the baked potatoes on a sheet pan. Slash the tops of the potatoes open with a sharp knife. Squeeze the ends of the potatoes to puff open the cut. Combine salsa, black beans and corn with peppers in a medium saucepan. Cook over low heat until heated through, stirring frequently. Spoon black bean mixture into the pockets of the potatoes. Sprinkle with the Cheddar cheese. Bake potatoes about 5 minutes until cheese is melted. Meanwhile, stir together the sour cream and chili powder in a small bowl. Top each baked potato with 2 tbsp. of the sour cream mixture and serve immediately.
Serves 4.
