Easy Tex Mex Chicken Pot Pie Recipe Rating: N/A

Ingredients   (view qty in metric system instead)
2 large flour tortillas, warmed until pliable
1 can condensed cream of mushroom soup
2 cups chopped cooked chicken
16 ounce package frozen, thawed mixed vegetables, drained
4 ounce can diced mild green chilies
1/3 cup chopped fresh cilantro leaves

Directions
Preheat oven to 375 degrees. Line the bottom of a 9 inch pie plate with 1 tortilla. Stir together soup, chicken, mixed vegetables, diced chilies and cilantro in a large bowl. Spoon chicken mixture into the pie plate. Top filling with the remaining tortilla. Coat the top of the tortilla with cooking spray. Cover pie plate with foil. Bake 20 minutes. Uncover and bake an additional 25 minutes until filling is hot and top is golden. Cut pie into 6 wedges and serve.
