Ingredients (view qty in metric system instead)
Crust: 1/4 cup sugar 1/3 cup butter 1 1/2 cups graham cracker crumbs
Filling: three 8 ounce packages cream cheese, softened 3/4 cup sugar 4 large eggs 1 tsp. vanilla extract 21 ounce can blueberry, raspberry or strawberry pie filling
Directions
For Crust: Combine butter and sugar in a small saucepan. Cook, stirring, over low heat until butter is melted. Place graham crumbs in a medium bowl. Stir in butter mixture until evenly moistened. Press crust mixture evenly in the bottom of a 13x9 inch baking pan. Refrigerate crust while preparing filling.
For Filling: Preheat oven to 325 degrees. Beat cream cheese in a large bowl until fluffy. Beat in sugar. Add eggs one at a time, beating well after each addition. Add vanilla and mix until well blended. Spoon berry pie filling over prepared crust. Pour cream cheese mixture over berries. Bake 45 to 50 minutes until cheesecake is set. Transfer to a rack and cool to room temperature. Cover and refrigerate cheesecake at least 2 hours. Cut cheesecake into 24 squares. Store refrigerated in an airtight container.
Makes about 2 dozen squares.
