Ingredients (view qty in metric system instead)
4 large eggs, beaten to blend 1 cup sugar 1 1/3 cups finely ground pecans 6 tbsp. all purpose flour 1 tsp. baking powder 1 tsp. vanilla extract 1/2 cup strawberry jam
Directions
Preheat oven to 350 degrees. Grease a 9 inch springform pan. Beat together eggs and sugar in a large bowl until ribbons form. Mix in ground pecans, flour, baking powder and vanilla on low speed. Pour batter into the prepared pan. Bake about 30 minutes until a toothpick comes out clean. Transfer cake to a rack and cool 10 minutes. Meanwhile, place jam in a small saucepan and stir over low heat until partially melted. Remove pan sides and pour jam over, allowing some to drip down sides. Refrigerate cake about 30 minutes until glaze is set.
Serves 8 to 10.
