16 ounces lean ground lamb 1 medium onion, peeled and chopped 1 medium red bell pepper, stemmed, seeded and chopped 2 cups tomato juice 1/2 cup canned tomato sauce 1 cup canned diced tomatoes with juices 1/4 cup prepared salsa 2 tbsp. chili powder 1 1/2 tbsp. paprika 1 tbsp. minced fresh garlic 1/2 tsp. salt 1/2 tsp. pepper
Directions
Cook lamb in a large saucepan, breaking up clumps, over medium heat until browned. Add onion and bell pepper and cook about 5 minutes until softened, stirring frequently. Discard the fat from the pan. Add the tomato juice, tomato sauce, diced tomatoes, salsa, chili powder, paprika, garlic, salt and pepper to the pan and bring to a boil, stirring frequently. Reduce heat to medium low and simmer chili about 1 hour until thickened, stirring occasionally. Serve hot.
Serves 4 to 6.
