Ingredients (view qty in metric system instead)
1 cup butter, softened 1 cup powdered sugar 1/2 cup granulated sugar 1 large egg 2 tsp. vanilla extract 2 1/4 cups all purpose flour 1/2 tsp. baking soda 1 cup chopped dried dates
Directions
Combine butter, powdered sugar, granulated sugar, egg and vanilla in a large bowl. Beat until fluffy. Sift together flour and baking soda and stir into butter mixture until well blended. Stir in dates. Shape dough into a 12 inch long log. Wrap tightly in plastic wrap and refrigerate at least 2 hours until firm.
Preheat oven to 350 degrees. Slice dough into 1/4 inch thick rounds and place 2 inches apart on ungreased cookie sheets. Bake 10 to 12 minutes until just set. Cool cookies completely on racks. Store at room temperature in an airtight container.
Makes about 4 dozen cookies.
