Ingredients (view qty in metric system instead)
1/2 cup all purpose flour 1/2 cup seasoned dry breadcrumbs 1 tsp. paprika 1/2 tsp. garlic powder 1/4 tsp. salt 1/4 tsp. pepper 4 boneless, skinless chicken breast halves, about 5 to 6 ounces each 1/4 cup vegetable oil 1/2 cup orange marmalade 1/4 cup fresh orange juice
Directions
Combine flour, breadcrumbs, paprika, garlic powder, salt and pepper in a pie plate. Pat chicken dry with paper towels. Dredge chicken in the flour mixture to coat, shaking off excess. Heat oil in a medium skillet over medium high heat. Add chicken and cook about 3 minutes per side until browned. Pour off oil from skillet. Stir together marmalade and orange juice in a small bowl. Pour marmalade mixture over the chicken. Cook about 10 minutes until marmalade forms a glaze and chicken is cooked through, stirring occasionally. Serve immediately.
Serves 4.
