Easy Microwaved Chocolate Stuffed Marshmallow Bars

Ingredients (view qty in metric system instead)
6 ounce package semisweet chocolate chips 1/2 cup powdered sugar 2 tbsp. plus 1/4 cup margarine 1 tbsp. water 1/4 tsp. vanilla extract 5 cups miniature marshmallows 1/2 cup creamy peanut butter 1/4 cup light corn syrup 5 cups chocolate flavored rice cereal
Directions
Butter a 7x11 inch baking pan. Combine chocolate chips, powdered sugar, 2 tbsp. margarine and water in a medium microwave safe bowl. Microwave on High power about 30 seconds, stirring twice, until chocolate is melted. Stir in vanilla. In a separate bowl, microwave remaining 1/4 cup margarine about 30 seconds until melted. Add mini marshmallows and stir to coat. Microwave about 1 minute until marshmallows are puffed. Stir marshmallows until smooth. Stir in peanut butter and corn syrup. Add cereal and stir gently to coat. Spread half of the cereal mixture evenly in the prepared pan. Sp[read the melted chocolate mixture over cereal. Spread remaining cereal mixture over chocolate. Cover and refrigerate about 20 to 30 minutes until set. Cut into bars and serve or store, refrigerated, in an airtight container.
Makes about 1 1/2 dozen bars.
