Ingredients (view qty in metric system instead)
Pumpkin Layer: 1 large egg, beaten to blend 1 cup canned pumpkin puree 1/3 cup sugar 1 tsp. pumpkin pie spice 1 inbaked 9 inch pie shell
Pecan Layer: 2/3 cup light corn syrup 2 large eggs, beaten to blend 1/2 cup sugar 3 tbsp. butter, melted 1/2 tsp. vanilla extract 1 cup pecan halves
Directions
For Pumpkin Layer: Preheat oven to 350 degrees. Whisk together egg, pumpkin puree, sugar and pie spice in a large bowl until well blended. Spread the pumplin mixture evenly over the bottom of the pie shell.
For Pecan Layer: Whisk together corn syrup, eggs, sugar, melted butter in a large bowl. Stir in pecans. Spoon the pecan mixture over the pumpkin layer. Bake pie about 50 minutes until filling is set. Transfer pie to a rack and cool completely before serving.
Serves 8 to 12.
