Ingredients (view qty in metric system instead)
6 boneless, skinless chicken breast halves, about 6 ounces each 1 tbsp. vegetable oil 2 tbsp. lemon juice, divided 1/2 tsp. ground ginger, divided 1 tsp. salt 1 tsp. pepper 1/4 cup orange marmalade 1 tbsp. brandy
Directions
Prepare grill. Stir together oil and 1 tbsp. lemon juice in a small bowl. Rub the oil mixture all over the chicken. Season chicken with 1/4 tsp. ginger, salt and pepper. Stir together marmalade, brandy, remaining 1 tbsp. lemon juice and 1/4 tsp. ginger in a small bowl. Brush chicken all over with half of the marmalade mixture. Grill chicken 8 minutes. Brush again with the marmalade mixture. Turn chicken over and grill an additional 8 to 10 minutes until cooked through. Divide chicken between plates and serve.
Serves 6.
