Ingredients (view qty in metric system instead)
2 filet mignon, cut about 1 1/4 inches thick 1/4 tsp. salt 1/4 tsp. pepper 1/2 cup tawny port 1/4 cup red wine vinegar 1/2 tsp. dijon mustard 1 1/2 tsp. olive oil
Directions
Season both sides of filets with salt and pepper. Whisk together port, vinegar and dijon in a small bowl. Heat oil in a medium skillet over medium-high heat. Add filets and cook about 4 minutes per side for medium-rare. Transfer filets to serving plates. Pour port mixture into skillet and boil, stirring, until reduced to 2 tbsp. Spoon glaze over filets and serve.
Serves 2.
