Ingredients (view qty in metric system instead)
2 pounds lean ground beef 1 tbsp. vegetable oil 1/3 cup ketchup 1 large green bell pepper, cored, seeded and diced 2 stalks celery, finely chopped 1 tbsp. Cajun seasoning 1/4 tsp. onion powder 1/2 tsp. Tabasco sauce 1/4 cup prepared mild or spicy salsa
Directions
Preheat oven to 350 degrees. Coat the inside of a large baking pan with cooking spray. Mix together ground beef, oil, ketchup, bell pepper, celery, Cajun seasoning, onion powder and Tabasco in a large bowl. Form the beef mixture into a 9x4 inch loaf. Place the meatloaf in the prepared pan. Bake 60 minutes. Spoon salsa over top of meatloaf and bake an additional 10 minutes. Let meatloaf stand 5 minutes before slicing and serving.
Serves 6 to 8.
