Ingredients (view qty in metric system instead)
2 tbsp. vegetable oil 1 large onion, peeled and chopped 3 cloves garlic, peeled and chopped 1 tsp. ground cumin 1 tbsp. chili powder 1/2 tsp. crumbled dried oregano three 15 ounce cans black beans 1/4 tsp. pepper sour cream prepared salsa shredded Cheddar cheese
Directions
Heat oil in a large saucepan over medium heat. Add onion and cook 5 minutes, stirring occasionally. Add garlic, cumin, chili powder and oregano. Cook, stirring, 1 minute. Place the black beans from 1 of the cans in a food processor. Puree beans until smooth. Add the black bean puree to the pan along with the remaining 2 cans beans and the pepper. Reduce the heat to low and simmer the soup 15 minutes, stirring frequently. Divide the soup between bowls and garnish with dollops of sour cream, salsa and Cheddar cheese. Serve soup immediately.
Serves 4 to 6.
