Ingredients (view qty in metric system instead)
Crust: 24 chocolate wafer cookies 1/4 cup melted butter
Filling: 21 large marshmallows 5 ounce can evaporated milk 3 tbsp. bourbon 1 cup heavy or whipping cream
Directions
For Crust: Preheat oven to 350 degrees. Grind cookies to crumbs in a food processor. Add melted butter and blend until evenly moistened. Reserve 2 tbsp. crumb mixture. Press remaining crumbs into a 9 inch pie pan. Bake crust 10 minutes. Transfer to a rack and cool completely.
For Filling: Combine marshmallows and evaporated milk in a large saucepan. Cook, stirring, over medium-low heat until marshmallows are melted. Pour into a large bowl and cool completely. Stir in bourbon. Whip cream to stiff peaks in a medium bowl. Fold whipped cream into the marshmallow filling. Pour into prepared crust. Sprinkle reserved 2 tbsp. crumbs over top of filling. Refrigerate about 4 hours until filling is set.
Serves 8.
