Easy Baked Italian Beef and Vegetable Meatloaf

Ingredients (view qty in metric system instead)
6 ounce package poultry stuffing mix 26 ounce jar of your favorite spaghetti sauce, divided 2 tsp. dried oregano, divided 1 1/2 pounds lean ground beef 1/2 tsp. salt 1/2 tsp. pepper 2 cups chopped fresh zucchini 2 cups sliced fresh mushrooms 1/2 cup peeled, chopped onion 1 tsp. minced fresh garlic 1 cup shredded Mozzarella cheese
Directions
Preheat oven to 375 degrees. Lightly coat the inside of a 9x13 inch baking pan with cooking spray. Stir together poultry stuffing mix, 1/2 the spaghetti sauce and 1 tsp. oregano in a large bowl. Add the ground beef, salt and pepper and mix well. Pat the beef mixture into the prepared pan. Combine the remaining spaghetti sauce, 1 tsp. oregano, zucchini, mushrooms, onion and garlic in a large bowl and stir to combine. Spoon the vegetable mixture evenly over the top of the meatloaf. Cover the pan with foil and bake meatloaf 25 minutes. Discard foil and sprinkle the Mozzarella over the meatloaf. Bake an additional 10 minutes until meatloaf is cooked through. Let meatloaf stand 5 minutes before slicing and serving.
Serves 6 to 8.
