Easy Baked Blueberry Pancake with Blueberry Syrup

Ingredients (view qty in metric system instead)
1 cup packaged pancake mix 1 tsp. finely grated lemon peel 2 tbsp. butter 16 ounce can blueberries, drained, juice reserved 1/3 cup sugar 1 tbsp. cornstarch
Directions
Preheat oven to 400 degrees. Prepare the pancake mix according to package directions. Stir in the lemon peel. Melt the butter in a large ovenproof skillet over medium heat. Spoon the blueberries into the bottom of the skillet. Pour the pancake batter over the blueberries. Bake pancake about 15 to 18 minutes until cooked through. Meanwhile, stir together sugar, cornstarch and reserved blueberry juice in a small saucepan until smooth. Cook over medium heat until thickened and bubbly, stirring constantly. Loose the edges of the pancake from the sides of the skillet. Invert pancake onto a plate and spoon the blueberry syrup over. Serve immediately.
Serves 4.
