Ingredients (view qty in metric system instead)
2 pounds cubed beef for stew 2 large packages frozen, thawed mixed vegetables 4 cups tomato juice 28 ounce can chopped tomatoes 3 tbsp. tapioca pearls 1 tsp. salt 1/2 tsp. pepper 2 cups water
Directions
Preheat oven to 350 degrees. Combine stew beef cubes, mixed vegetables, tomato juice, canned tomatoes, tapioca pearls, salt, pepper and water in a 5 quart baking dish. Cover and bake 4 hours until beef is tender and stew is thickened.
Serves 6 to 8.
