Easter Raspberry Ring Salad with Creamy Fruit Filling

Ingredients (view qty in metric system instead)
2 cups boiling water 6 ounce package raspberry flavored gelatin 2 cups raspberry sherbet 11 ounce can mandarin orange segments, drained 13.5 ounce can pineapple chunks, drained 1 cup sweetened flaked coconut 1 cup miniature marshmallows 1 cup sour cream
Directions
Place a 4 cup ring mold into the refrigerator to chill. Place the raspberry gelatin in a large bowl. Add boiling water and stir until gelatin is dissolved. Add the raspberry sherbet and stir until melted. Pour the raspberry mixture into the chilled ring mold. Refrigerate about 3 to 4 hours until firm. Meanwhile, combine mandarin segments, pineapple chunks, coconut and marshmallows in a large bowl. Fold in sour cream until well blended. Cover and refrigerate the fruit mixture at least 3 hours.
Just before serving: Unmold the gelatin onto a serving plate. Spoon the creamy fruit mixture into the center of the ring and serve.
Serves 6 to 8.
