Easter Lamb Chops with Warm Balsamic Mint Vinaigrette

Ingredients (view qty in metric system instead)
1 cup chicken broth 1 tbsp. olive oil 1/2 tbsp. minced fresh garlic 1/4 cup balsamic vinegar 1 tbsp. minced fresh mint leaves 1 tbsp. chopped fresh parsley leaves 4 lamb chops, about 4 to 6 ounces each 1/4 tsp. salt 1/4 tsp. pepper
Directions
Bring broth to a boil in a small saucepan over medium high heat. Boil about 8 minutes until reduced by half. Remove the pan from the heat. Heat the oil in a medium skillet over medium heat. Add garlic and cook 1 minute, stirring constantly. Add reduced broth and balsamic vinegar. Boil about 5 minutes until reduced by half. Stir in mint and parsley leaves. Remove the pan from the heat. Preheat broiler or grill. Season the lamb chops on both sides with salt and pepper. Broil or grill chops about 3 minutes per side for medium rare. Divide lamb chops between plates and spoon warm vinaigrette over. Serve immediately.
Serves 2 to 4.
