Ingredients (view qty in metric system instead)
2 cups all purpose flour 1 tsp. baking soda 1 tsp. salt 1 cup solid vegetable shortening 1 cup sugar 1 cup brown sugar 2 large eggs 1 tsp. vanilla extract 2 cups rolled oats 1 cup shredded coconut 1 cup small jelly beans powdered sugar for dusting
Directions
Preheat oven to 350 degrees. Lightly grease 2 sheet pans. Combine flour, baking soda and salt in a medium bowl. Cream together shortening with both sugars in a large bowl. Beat in the eggs one at a time. Beat in the vanilla. Gradually blend in flour mixture. Fold in oats, coconut and jelly beans. Roll 1 1/2 tablespoonfuls of dough into balls. Place 1 1/2 inches apart on prepared sheet pans. Dip the bottom of a glass in flour and flatten cookies slightly. Bake cookies 10 to 12 minutes until firm to the touch. Transfer cookies to a rack and cool completely. Sift powdered sugar over cookies.
Makes about 2 dozen cookies.
