Ingredients (view qty in metric system instead)
12 ounces mixed diced dried fruit 1 cup dark rum 1 cup water 1/2 cup sugar 2 tbsp. cornstarch 2 tsp. fresh lemon juice 1 cup chopped toasted pecans 1 prebaked 9 inch deep dish pie crust
Directions
Combine dried fruit, rum and water in a large saucepan and heat to a simmer. Simmer 5 to 10 minutes until fruit is softened. Drain fruit, reserving liquid. Add enough water to cooking liquid to equal 1 cup. Return 3/4 cup liquid to saucepan. Stir together remaining 1/4 cup liquid together with sugar and cornstarch, stirring until smooth. Add cornstarch mixture to saucepan and stir in lemon juice. Cook over medium heat, stirring, until mixture boils and thickens. Stir in fruit and pecans. Cool slightly. Pour filling into prepared crust and cool to room temperature. Serve with ice cream if desired.
Serves 6 to 8.
