Ingredients (view qty in metric system instead)
1 pound mixed dried fruit such as prunes, raisins, dates, apples, apricots, pears or peaches 1 cup water 1 tsp. vanilla extract 1 1/2 cups old-fashioned rolled oats 3/4 cup dark brown sugar 1/2 cup chopped walnuts 1/4 tsp. salt 3/4 cup melted butter
Directions
Working in batches, coarsely chop dried fruit in a food processor. Transfer chopped fruit to a medium saucepan and add water. Heat to a boil. Reduce heat, cover and simmer 10 minutes until most of water is absorbed and fruit is tender. Remove cover and cook, stirring constantly, until stiff, about 3 minutes. Remove from heat and stir in vanilla. Cool to room temperature.
Preheat oven to 350 degrees. Line a 9 inch square baking pan with foil. Stir together flour, oats, sugar, walnuts and salt in a medium bowl. Add melted butter and stir until evenly moistened. Set aside 1 cup oat mixture in a small bowl. Press remaining oat mixture into the bottom of the prepared pan. Bake 15 minutes. Spread fruit mixture evenly over baked crust. Press reserved 1 cup oat mixture over top of fruit. Bake about 45 minutes until the top is lightly browned. Transfer pan to a rack and cool 10 minutes. Remove bars with foil and cool completely. Discard foil and cut into 12 bars.
Makes 1 dozen bars.
