Ingredients (view qty in metric system instead)
8 slices bacon 2 cups sliced onions four slices calf's liver, each about 1/2 inch thick 1/2 cup all purpose flour 1 tsp. pepper 1/4 cup water 1/2 cup ketchup
Directions
Heat a large skillet over medium heat. Add bacon and cook until crisp. Transfer bacon to paper towels to drain. Pour half the drippings from the skillet into a small bowl. Add onion to skillet and cook, stirring, until golden. Transfer cooked onions to a medium bowl. Stir together flour and pepper in a pie plate. Coat liver slices with the flour mixture, shaking off the excess. Add reserved drippings to skillet and heat over medium high heat. Add liver to skillet and cook about 2 minutes per side until browned and crisp. Add onions and cook 1 minute. Transfer liver and onions to a plate. Stir together water and ketchup in a small bowl and add to skillet. Simmer 1 minute, stirring. Divide liver and onions between 4 plates. Place 2 pieces bacon over each slice of liver. Spoon sauce over and serve.
Serves 4.
