Ingredients (view qty in metric system instead)
3 pounds russet potatoes 1 tsp. paprika 1 medium onion, peeled and chopped 3/4 cup chopped red bell pepper 1/4 cup chopped fresh parsley leaves 4 ounces grated Swiss cheese 4 ounces grated sharp cheddar cheese 2 cups half and half
Directions
Boil potatoes in a large pot with water to cover. Boil about 30 minutes until tender. Drain and cool potatoes. Peel and slice. Preheat oven to 350 degrees. Butter a 13x9 inch baking dish. Layer half the potato slices in the prepared dish. Season with 1/2 tsp. paprika, 1/2 tsp. salt and 1/2 tsp. pepper. Sprinkle with half of onion, half of bell pepper, half of parsley and half of Swiss and cheddar cheeses. Top with remaining potato slices, paprika, salt, pepper, onion, bell pepper, parsley, Swiss and cheddar. Pour half and half over potatoes. Cover with foil and bake 30 minutes. Uncover dish and press down on potatoes with a spatula. Bake an additional 45 minutes until liquid is absorbed and top is lightly browned. Cool slightly before serving.
Serves 8 to 10.
