Ingredients (view qty in metric system instead)
Crust: 3/4 cup plain granola cereal 3/4 cup graham cracker crumbs 1/4 cup melted butter 3 tbsp. sugar
Baked Layer: 14 ounce can sweetened condensed milk 1/2 cup key lime juice 3 large egg yolks
Cold Layer: 8 ounces cream cheese, room temperature 1/2 cup sweetened condensed milk 1/4 cup key lime juice 2 tbsp. sugar 1 tsp. vanilla extract
Directions
For Crust: Preheat oven to 350 degrees. Coarsely grind granola in a food processor. Transfer to a medium bowl and stir in graham crumbs, butter and sugar. Press into the bottom of a 9 inch glass pie dish. Bake crust about 8 minutes until golden brown. Cool crust completely on a rack. Reduce oven to 300 degrees.
For Baked Layer: Whisk together condensed milk, lime juice and yolks in a medium bowl until blended. Pour over crust and bake until set, about 25 minutes. Cool to room temperature.
For Cold Layer: Beat together cream cheese, condensed milk, lime juice, sugar and vanilla in a large bowl. Pour over baked layer and smooth top. . Cover and refrigerate until firm, about 4 hours. Serve with whipped cream if desired.
Serves 8 to 10.
