Ingredients (view qty in metric system instead)
2 packages (6.5 ounces each) corn muffin and bread mix 1 can (11 ounces) corn with chopped green and red peppers, such as Mexicorn, drained 2/3 cup half and half 2 eggs 2 tablespoons chopped scallion, white and light green parts, from 2 scallions 3/4 teaspoons gound cumin 1/4 teaspoon pepper
Directions
Preheat oven to 400 degrees. Line 8 inch square baking pan with enough foil to overhang sides by 2 inches; coat with cooking spray. In bowl stir together muffin mix, corn, half and half, eggs, scallions, cumin and pepper. Spread batter in pan. Bake 15 to 20 minutes or until toothpick inserted into center comes out clean. Cool at least 5 minutes before serving.
Makes 9 servings.
