Ingredients (view qty in metric system instead)
1/2 cup butter, room temperature 3/4 cup sugar 2 large eggs 1 tsp. vanilla extract 3/4 cup all purpose flour 1/2 cup chopped pecans 2 tbsp. unsweetened cocoa powder 1/4 tsp. baking powder 1/4 tsp. salt 2 cups miniature marshmallows 6 ounce package semisweet chocolate chips 1 cup creamy peanut butter 1 1/2 cups crispy rice cereal
Directions
Preheat oven to 350 degrees. Grease the inside of a 13x9 inch baking pan. Combine the butter and sugar in a large bowl and beat until light and fluffy. Beat in eggs and vanilla. Stir in the flour, pecans, cocoa powder, baking powder and salt. Spread the batter evenly in the bottom of the prepared pan. Bake about 15 to 20 minutes until a toothpick comes out clean. Sprinkle the mini marshmallows over the top of the warm bars and bake an additional 3 minutes. Transfer the pan to a rack and cool completely.
Combine the chocolate chips and peanut butter in a small saucepan over low heat, Cook, stirring, until melted and cooled. Remove the pan from the heat and stir in the rice cereal. Spread the chocolate mixture over the cooled bars. Refrigerate until set. Cut into bars. Refrigerate bars in an airtight container.
Makes about 2 dozen bars.
