Ingredients (view qty in metric system instead)
Crust: 1 1/2 cups old fashioned oats 1 1/2 cups all purpose flour 1 cup brown sugar 1/2 tsp. baking soda 1 cup cold butter, diced
Filling: 12 ounce package frozen, thawed blueberries 2/3 cup raspberry jam 5 tsp. all purpose flour 1 1/2 tsp. finely grated lemon peel
Directions
For Crust: Preheat oven to 375 degrees. Butter the inside of a 13x9 inch baking dish. Combine oats, flour, brown sugar and baking soda in a large bowl. Cut in butter until coarse crumbs form. Press 1/2 of the crumb mixture evenly into the bottom of the prepared dish. Bake crust about 15 minutes until lightly browned. Transfer the dish to a rack and cool the crust slightly.
For the Filling: Stir together blueberries, raspberry jam, flour and lemon peel in a medium bowl. Spread the filling evenly over the baked crust. Sprinkle the remaining crust mixture over the filling. Bake about 35 minutes until the topping is golden. Transfer the dish to a rack and cool completely before cutting into bars.
Makes about 2 dozen bars.
