Ingredients (view qty in metric system instead)
8 ounces ground beef 1/2 cup diced Spanish onion 1/2 tsp. chili powder 1/2 tsp. ground cumin 1/2 tsp. crumbled dried oregano 1 tsp. garlic salt 1 cup diced green bell pepper 1/2 cup diced red bell pepper 1/4 cup prepared salsa 8 large eggs 4 tbsp. vegetable oil 1 1/2 cups grated Cheddar cheese
Directions
Combine beef and onion in a large skillet. Cook about 10 minutes over medium heat, breaking up clumps, until beef is well browned. Pour off the grease. Add chili powder, cumin, oregano and garlic salt to the beef. Cook 4 minutes, stirring frequently. Stir in bell peppers and salsa. Cook 1 minute.
For each omelet: Whisk 2 eggs to blend in a small bowl. Heat 1 tbsp. oil in a medium skillet over medium high heat. Pour eggs into the prepared skillet. Cook eggs until set but still moist. Spoon 1/2 cup of the beef mixture over the omelet. Sprinkle 1/3 cup Cheddar over beef. Fold omelet over filling and serve.
Makes 4 omelets.
