Ingredients (view qty in metric system instead)
6 rib or loin lamb chops 1/2 tsp. salt 1/2 tsp. pepper 3 tbsp. fresh lemon juice 1/4 tsp. minced garlic 1/4 cup dijon mustard 1 tsp. dried mint, crumbled 2 cups soft breadcrumbs vegetable oil
Directions
Preheat broiler and broiler pan. Season chops with salt and pepper. Sprinkle both sides with lemon juice. Mix together garlic, dijon and mint in a small bowl. Brush mixture over both sides of lamb. Place breadcrumbs in a shallow pan or pie plate. Coat both sides of lamb with crumbs, pressing to adhere. Brush broiler pan with some vegetable oil. Place chops on pan and broil 3 to 4 minutes per side, until crust is crisped and browned. Serve immediately.
Serves 2 to 3.
