Ingredients (view qty in metric system instead)
4 pork tenderloins, 5 to 6 ounces each 3 tbsp. cracked black peppercorns four 12 to 14 inch flour tortillas 6 ounces prepared guacamole 4 ounces soft goat cheese 3/4 cup roasted diced red pepper 3/4 cup roasted diced yellow pepper 1 cup diced tomato 2 cups shredded lettuce
Directions
Preheat grill. Roll pork in peppercorns to coat. Grill until done. Warm tortillas. Spread each tortilla with 1 ounce of goat cheese. Top with 1 1/2 ounces guacamole. Dice pork and lay over tortillas. Top each with red and yellow peppers, lettuce and tomato. Tuck in the sides of tortillas and roll like a cigar. Cut in half on the diagonal.
Serves 4.
