Ingredients (view qty in metric system instead)
Filling: 1 pound dried pitted dates 1 cup brown sugar 2/3 cup water 1 tsp. vanilla extract
Crust: 1 1/2 cups old fashioned oats 1 1/2 cups all purpose flour 1 cup brown sugar 1/2 tsp. baking soda 1 cup cold butter, diced
Directions
For filling: Combine dates, 1 cup brown sugar, water and vanilla in a saucepan and bring to a simmer, stirring. Simmer 1 minute. Puree in a food processor and cool.
For crust: Preheat oven to 350 degrees. Butter a 9x13 baking pan. Stir together oats, flour, sugar and soda. Cut in butter and rub with your fingers until coarse crumb consistency. Press 1/2 of mixture into bottom of prepared pan. Spread filling over. Sprinkle remaining crumb mixture over top. Bake until golden brown, about 35 minutes. Cool in pan. Cut into squares to serve.
Makes 12 to 24 bars.
