Ingredients (view qty in metric system instead)
3/4 cup dried currants 1/2 cup dry sherry 1/2 cup plus 3 tbsp. butter, divided 1 large onion, peeled and chopped 2 stalks celery, chopped 1 tbsp. dried mixed herbs 14 ounce package cubed herb-seasoned stuffing mix 2 cups water 1 cup chopped toasted pecans
Directions
Combine currants and sherry in a medium bowl. Let stand until currants are softened and plumped, about 30 minutes. Melt 3 tbsp. butter in a large skillet. Add onion, celery and dried herbs. Cook until vegetables are tender, about 8 minutes. Place stuffing cubes into a large bowl. Melt 1/2 cup butter with 2 cups water in a small saucepan. Pour over stuffing cubes. Add currant mixture, onion mixture and pecans and toss to combine. Proceed to stuff turkey cavity or bake in a large buttered casserole dish at 350 degrees for 30 minutes, covered with foil. Uncover and bake an additional 30 minutes.
Makes about 12 cups stuffing.
