3 ounces chopped unsweetened chocolate 1/2 cup butter 3 large eggs, beaten to blend 3/4 cup sugar 1/2 cup all purpose flour 1 tsp. vanilla extract 3 cups sweetened shredded coconut 2/3 cup sweetened condensed milk
Directions
Preheat oven to 350 degrees. Grease a 9 inch pie plate. Combine chocolate and butter in the top of a double boiler over simmering water. Stir frequently until melted and smooth. Remove chocolate from over the water and let cool 5 minutes. Whisk in eggs, sugar, flour and vanilla. Pour the chocolate mixture into the prepared pie plate. Stir together coconut and condensed milk in a medium bowl. Spoon the coconut mixture over the chocolate, leaving a 1 inch border on the edges. Bake pie 30 minutes until coconut is golden. Transfer pie to a rack and cool completely. Slice pie with a warm knife. Cover and refrigerate any remaining pie.
