Ingredients (view qty in metric system instead)
2 cups all purpose flour 1 tsp. cayenne pepper 1 tsp. crumbled dried basil 1 tsp. crumbled dried oregano 1 tsp. garlic powder 1 tsp. paprika 1/4 tsp. salt 1/4 tsp. pepper 4 large eggs 1/2 cup milk 4 boneless, skinless chicken breast halves, about 6 ounces each vegetable oil for frying 1 cup honey 1 cup toasted, chopped pecans
Directions
Stir together flour, cayenne, basil, oregano, garlic powder, paprika, salt and pepper in a large bowl. Whisk together eggs and milk to blend in another large bowl. Pour oil into a large cast iron skillet to a depth of 1 1/2 inches. Heat oil to 375 degrees over high heat. Dredge chicken in flour mixture then coat with egg mixture, letting excess drip off. Add to skillet and fry about 7 minutes per side until chicken is golden brown and cooked through. Drain chicken on paper towels. Meanwhile, heat honey to a simmer in a small saucepan. Stir in pecans and bring to a boil. Pour honey mixture over chicken and serve immediately.
Serves 4.
