Ingredients (view qty in metric system instead)
Salad: 20 ounce can sliced pineapple with juice 7 ounce can white albacore tuna, drained 11 ounce can mandarin oranges, drained 1 medium cucumber, peeled and sliced 1/4 cup chopped green onion fresh lettuce leaves
Dressing: 2 tbsp. reserved pineapple juice 1 cup prepared mayonnaise 1 tbsp. lemon juice 1/4 tsp. curry powder
Directions
For Salad: Drain pineapple, reserving 2 tbsp. juice. Break up tuna into chunks in a large bowl. Add mandarin oranges, cucumber and green onion and toss to combine. Line 5 plates with lettuce leaves. Divide tuna mixture between plates. Place 2 slices pineapple on each salad.
For Dressing: Stir together reserved 2 tbsp. pineapple juice, mayonnaise, lemon juice and curry powder in a small bowl.
Spoon some of the dressing over each salad and serve.
Serves 5.
