Ingredients (view qty in metric system instead)
1 cup quick cooking oats, uncooked 1 cup all purpose flour 1/2 cup sweetened shredded coconut 1/2 cup chopped pecans 1/2 cup brown sugar 1 tsp. baking powder 1/2 cup melted butter or margarine 1 can sweetened condensed milk 1/2 cup lemon juice 1 tbsp. finely grated lemon peel
Directions
Preheat oven to 350 degrees. Lightly coat the bottom of a 9x9 inch baking pan with cooking spray. Stir together oats, flour, coconut, pecans, brown sugar, baking powder and melted butter or margarine in a medium bowl until crumbly. Pat half of the crumb mixture into the bottom of the prepared pan. In a separate bowl, stir together condensed milk, lemon juice and peel. Spoon on top of crust and sprinkle remaining crumb mixture over. Bake bars 25 to 30 minutes until top is lightly browned. Transfer pan to a rack and cool completely before cutting into bars.
Makes about 1 dozen bars.
