Crunchy Fried Shrimp with Cornmeal Crust and Cayenne Mayonnaise

Ingredients (view qty in metric system instead)
Mayonnaise: 1 1/3 cups mayonnaise 2 1/2 tsp. fresh lemon juice 2 medium cloves garlic, peeled and minced 1/2 tsp. cayenne pepper 1/2 tsp. Dijon mustard
Shrimp: 1/2 cup yellow cornmeal 1/2 tsp. salt 1/2 tsp. cayenne pepper 1 1/2 pounds large, raw shrimp, peeled and deveined peanut oil for frying
Directions
For Mayonnaise: Whisk together mayonnaise, lemon juice, garlic, cayenne and Dijon in a small bowl. Cover and refrigerate while preparing shrimp.
For Shrimp: Stir together corn meal, salt and cayenne in a medium bowl. Pour peanut oil into a large saucepan to a depth of 2 inches. Heat oil to 375 degrees. Add shrimp to cornmeal mixture and toss to coat. Add shrimp to hot oil and fry about 1 1/2 minutes until golden and cooked through. Drain shrimp on paper towels. Serve shrimp with mayonnaise.
Serves 4 to 6.
