Ingredients (view qty in metric system instead)
16 ounce package frozen mixed vegetables 1 cup canned lima beans, drained 2 medium potatoes, cut into cubes 1 cup sliced carrots 3/4 cup sliced celery 1 medium onion, peeled and chopped 28 ounce can diced tomatoes with juices 1 tsp. dried marjoram 1 tsp. dried thyme 2 bay leaves 1 beef bouillon cube, crushed 1 cup water 1 pound beef stew meat, cut into 3/4 inch pieces
Directions
Place frozen vegetables in a large microwave safe bowl. Cover and microwave 5 minutes. Drain vegetables and transfer to a crockpot. Add lima beans, potatoes, sliced carrots, celery, onion, tomatoes with juices, marjoram, thyme, bay leaves, bouillon and water. Stir well to blend. Add stew meat, cover and cook on Low 8 hours. Discard bay leaves before serving.
Serves 6 to 8.
