Ingredients (view qty in metric system instead)
2 rabbits, skinned, dressed and cut into serving size pieces 1 cup sliced celery1 cup peeled, sliced carrots 1 medium onion, peeled and chopped 1 can sliced water chestnuts 2 cups sliced fresh mushrooms 3 cups chicken broth 2 tsp. dried, crushed juniper berries pinch dried basil 1/2 tsp. salt 1/2 tsp. pepper 2 tbsp. cornstarch 1/2 cup sherry
Directions
Combine rabbit pieces, celery, carrots, onion, water chestnuts, mushrooms, broth, juniper berries, basil, salt and pepper in a crockpot. Simmer on Low for 6 hours. Remove rabbit pieces. Stir together cornstarch and sherry in a small bowl until smooth. Stir mixture into crockpot and simmer until sauce is thickened. Return rabbit pieces to crockpot and stir into sauce. Heat through and serve.
Serves 6 to 8.
