Ingredients (view qty in metric system instead)
1/4 cup butter 5 to 6 pound boneless pork roast, cut into 4 pieces 3 cups peeled baby carrots 1/2 cup spicy brown mustard 1/2 cup honey 1 tsp. salt 1/2 tsp. pepper
Directions
Melt the butter in a large skillet over medium high heat. Add the pork roast pieces and brown on all sides. Transfer the browned pork to a crockpot. Arrange the carrots around the pork. Stir together the mustard, honey, salt and pepper in a small bowl. Spoon the honey mustard mixture over the pork. Cover and cook the pork 4 to 5 hours on HIGH or 6 to 7 hours on LOW until tender. Remove the pork and slice. Arrange the pork slices on a serving dish. Arrange the carrots around the pork. Spoon the pan juices over the pork and serve immediately.
Serves 8 to 10.
